Caves Carved out of the hillside beneath the winery, our underground aging caves are modeled on the subterranean cellars of the Côte d’Or. Naturally insulated with volcanic rock, the temperature in the caves remains between 55-59 degrees throughout the year, with humidity below 75 percent. The narrow passageways are lined with 550 premium French oak barrels, and although each barrel holds 60 gallons, the styles differ widely. Working closely with our French coopers and inspecting the wood staves they’ve chosen, we use barrels with wood and toasting levels that bring out the best qualities of each of our estate wines. In the caves, as in the vineyard, our approach is hands-on. And just as we harvest our grapes only when they reach optimum ripeness, we move our wines from barrel to bottle only when they are absolutely ready. |
